Concept :
An eight-meter vermilion blue gate guards the entrance to China Blue and provides a point of demarcation between Conrad Tokyo’s public spaces and this avant-garde Chinese restaurant. China Blue has obtained a Michelin star for five consecutive years, and this year is no exception. Guests enter on a transparent glass and granite pebbled passageway that leads past a window offering peep holes into the kitchen, and a peek at the behind-the-scenes action. Inside, private tables line a spectacular giant glass wall on one side, while semi-circular booths are laid out on the other. Dark oak interiors generate a solid yet modern sensibility and elegantly frame the brilliant views that sweep across the Royal Hamarikyu Gardens and Tokyo Bay. At one end of the restaurant, a walk-in floor to ceiling wine cellar, one of the highest in Tokyo and home to 2,500 bottles of wine, occupies an entire wall. Quietly tucked behind the cellar are three private rooms, offering different settings for different occasions. Chef Albert Tse, who established his reputation at Four Seasons Singapore’s famous Jiang-Na Chun restaurant, is the creator behind the original modern Chinese dishes.
