Concept :Entering ABE-YA!, a modest, somewhat hidden yakitoriya off Yamate Dori, guests are greeted by a smiling server, a hint of smoke from the grill, subtle music and a warm oshibori, as if teasing as many senses as possible were a required part of the visit. A sizzle from the semi-open kitchen and the laughter of guests provides the background for a skilled chef to wrap a few select chicken cuts in skin for texture before sprinkling them with salt for a distinctive first taste.
Key Points :ABE-YA!’s attention to detail extends to every facet of the operation: Chickens are sourced from a single supplier, skewers are cooked over binchotan charcoal for a cleaner burn and all sauces are homemade. Diners can sit at tables, in private rooms or at the counter and, with a single bite and all senses in sync, they quickly realize that ABE-YA! is not a typical chicken restaurant.
Recommended Dishes :Meat can be ordered by the skewer for about ¥300, or diners can leave it up to the chef with omakase. A la carte selections include caramelized white liver mousse (¥350) and charcoal grilled fruit (¥580) as well as a few vegetarian options.
