Concept :
Founded in 1999, KOYA is a Tokyo-based restaurant brand with 12 locations across the city, celebrated for its distinctive take on Spicy Japanese Chinese cuisine. At KOYA, guests can experience Japanese-style dan dan noodles (tantanmen) — a refined interpretation of the Sichuan classic that balances bold spice with the delicate sensibilities of Japanese cooking. By incorporating a wide range of medicinal spices while minimizing artificial seasonings, the dishes achieve both depth of flavor and a clean, health-conscious finish that appeals to modern diners worldwide.
Key Points :
At the heart of the menu are KOYA’s signature tantanmen, offered in four distinct styles, each showcasing a different expression of spice and umami. The intensely fiery Oni Tantanmen delivers a powerful numbing sensation from freshly ground Sichuan pepper. The Ao-Oni Tantanmen, made with aromatic green Sichuan pepper (ao-huajiao), brings a brighter, more refreshing heat layered with the sharpness of green chili. For a richer, more indulgent option, the Mala Soupless Tantanmen combines a thick sesame-based sauce with a well-balanced spicy and numbing profile. Meanwhile, the classic Japanese-style Soupless Tantanmen, a staple since the brand’s founding, features a savory-sweet soy-based sauce that feels both comforting and deeply satisfying. A milder alternative, the creamy Hime Tantanmen, rounds out the lineup, ensuring there is an option for every palate.Another standout is KOYA’s signature mapo tofu, served bubbling hot in a clay pot. Rich and thick in texture, it highlights the signature mala flavor, with the numbing sensation of Sichuan pepper and the heat of chili oil taking center stage. The tofu is presented in generous chunks rather than finely diced, allowing for a satisfying contrast in texture while fully absorbing the complex layers of spice and umami.
Recommended Dishes :
To complement the noodles, KOYA offers a wide selection of dim sum, including xiaolongbao, chive dumplings, shrimp dumplings, steamed pork buns and lotus leaf sticky rice. Lunch set menus are a highlight, particularly the popular Half & Half Set, which allows guests to enjoy two different types of tantanmen in one meal. Other set options combine noodles with dim sum, salad, dessert and Chinese tea, catering to both lighter and more indulgent dining preferences. In the evening, KOYA also presents curated dinner courses (¥4,500~) that bring together its signature dishes with appetizers and dim sum, making it suitable for casual parties.
Refined yet boldly flavored, KOYA offers a unique gateway into the world of tantanmen — an increasingly popular genre of Japanese-style spicy cuisine that continues to gain global attention for its harmony of heat, aroma and balance.
