Yet within this understated space lies one of Tokyo’s most intriguing dining experiences, a restaurant that has quietly become a destination for discerning diners. Chef Ishizaki runs his counter with an almost theatrical sense of restraint. He doesn’t overwhelm his guests with flourish or speech; instead, he allows the food to tell its story.

What makes Ginza Ishizaki remarkable is the chef’s dedication to sourcing. He carefully selects ingredients with its greatest priority — wagyu — that is selected from across the country. The restaurant uses only A5-ranked virgin black wagyu, and prepares various cuts using the best cooking methods. All course menus incorporate the essence of wagyu, bringing out the excellent characteristics and elevating it into cuisine. Noteworthy are the chateaubriand, steak tartare made with wagyu, top-quality seafood, including caviar, wagyu corned beef and sirloin prosciutto. Courses available are the Chef's Choice Course (¥40,000) and Special Course with Select Ingredients (¥55,000).
