Concept :
Ginza TORIYA PREMIUM offers yakitori made from female Hinai Jidori free-range chickens raised on the Akita Plateau and delivered directly from a contracted farm. The experienced chefs prepare chicken skewers every day, sprinkle them with rock salt from Sicily and carefully grill them over the finest Kishu Binchotan charcoal. In addition to chicken, they offer carefully selected items, such as pesticide-free vegetables grown with organic fertilizer by contracted farmers, as well as wine pairings.

Toriya Premium has a selection of 300 kinds of wine, ranging from prestigious to af-fordable, with a focus on French wines from Burgundy, Bordeaux and southern France. The yakitori goes perfectly with their wide variety of wines that have been carefully selected by a sommelier.The restaurant has seating at a wooden counter, table seats and semi-private rooms that can accommodate 5 to 8 people, making it ideal for business dinners or special occasions. The entire restaurant is also available for parties of 40 or more. Toriya premium serves delicious charcoal-grilled chicken and wine in a relaxing, modern Japanese space.

The recommended TORIYA course (15 dishes/¥12,000) starts with amuse-bouche and appetizers made with plenty of seasonal ingredients, and includes not only the classic yakitori skewers, but also yakitori with a fragrant aroma and yakitori with French-style sauces, as well as a full course meal and dessert that is sure to sat-isfy. The dishes were created in a collaboration with a culinary expert who trained at Pierre Gagnaire in Paris.
