コンセプト :KAGEYAMAROU offers affordable shark fin cuisine in Jiyugaoka. Finished in a casual modern décor with Chinese influences, KAGEYAMAROU is by no means limited to any one genre, rather setting itself up as fusion cuisine.
キーポイント :The signature dish is a paitan sauce rich in collagen made with chicken wings, instead of the usual tonkotsu pork bone broth, that have been slowly pressure cooked and blended with shark fin and oyster sauce for a delicious finish before it is served with ramen or poured over other items as a topping. KAGEYAMAROU uses premium Awajishima salt to highlight umami and has relationships with vegetable suppliers in Miura Kaigan.
お勧め料理 :One must-try item is the shark fin noodles or rice (￥2,000). Other popular items include the KAGEYAMAROU basil sauce seafood salad (￥1,600), stew of beef flank in coconut curry (￥1,800) and grilled beef fillet with Japanese pepper sauce (￥2,200). A variety of course menus are available (￥4,800~), as well as beverages such as traditional Chinese (Shaoxing) wine that has been aged over 10 years, wines, whisky, sake and shochu and various cocktails and soft drinks.
