Concept :

Tucked away in Tokyo’s prestigious Nishiazabu district, twelv., the brainchild of owner and fashionista Tacamizuma, who wanted to convey the producers’ feelings and soul, is the world’s first bar specializing in premium, organic craft sake.

Key Points :

The softly lit, simply decorated space with custom copper moire screens was conceived by designers Komal Kehar and Abilio Marcelo Hagihara to create a sophisticated, intimate atmosphere. Selection, pairing, and access to rare sake, is facilitated by Dmitry Bulakh, bronze prize winner at the sake sommelier world championships. Guests will discover tastes similar to wine and Champagne and even non-sake drinkers will be instant fans.

Recommended Dishes :

The time from opening to 10pm is for reservation-only pairing courses, featuring perfectly aged cheeses from Tuscany, homemade umami tapas, naturally harvested vegetables and more (¥12,000). Later in the evening, a DJ is on hand to allow guests to enjoy sake and an extensive a la carte menu featuring items such as premium sea bream (¥2,400), and rare vintage sake selections (¥1,200~) in a bar style. Bio sake flights starting at ¥4,000 are also available, as are private dining options. To rediscover sake and experience service a notch above omotenashi, visit twelv.
