Each course begins with an appetizer, followed by three varieties of sashimi—typically a selection of red-fleshed and white-fleshed fish. Seasonal grilled and simmered dishes highlight the chef’s craftsmanship, leading into ten pieces of seasonal nigiri featuring favorites such as medium fatty tuna, sea urchin, shrimp, and conger eel. The meal concludes with a delicate soup and dessert, creating a beautifully balanced progression from start to finish.
