Concept :
Located within the vibrant and buzzing Hiroo shopping street, just a short walk from the station, Sushiya NOBU awaits its customers with a commitment to sharing the heart of Japanese cuisine with a global audience. At Sushiya NOBU, preserving the essence of Japanese culinary culture is paramount. Each dish is crafted to evoke memories and engage the five senses, blending artistry with taste. Here, you can experience four different traditional Japanese dishes in one course: sushi, seasonal specialties, handmade soba noodles and fresh warabi mochi made right before your eyes. Chef Nobu Minagawa and his team are dedicated to delivering the most authentic traditional Japanese specialties, while accommodating individual preferences, even offering Western-influenced options upon request.
Key Points :
Minagawa’s impeccable artistic sensibility is present across all aspects of his work, from his elegant hors d’oeuvre-style appetizers to the breathtaking kumiko woodwork adorning the wall behind the counter. Ornate, geometric designs resembling flower petals made without nails and a lovingly pruned bonsai exhibit Minagawa’s precision and mastery. Eight spacious counter seats give guests a clear view of the exquisite ingredients carefully selected for the day, and the expert movements of the chef as he crafts, plates and presents his small masterpieces.Recommended Dishes :
Meals at Sushiya NOBU are omakase-style, where carefully curated sushi courses are based on the day’s selection of fish and the freshest and high-quality ingredients. Be sure to catch the chef’s popular specialty of Ootoro Katsu, a fatty cut of tuna deep-fried to resemble a pork cutlet. The Lunch Course (¥13,200) is available on weekends, and the Dinner Course (¥19,800) is available on weekdays. All courses come with a flight of appetizers, 10 pieces of sushi, handmade soba noodles and sweet homemade warabi mochi with gelato.Despite only opening in 2022, Sushiya Nobu has gained a lot of attention for their excellent dishes, superb attention to service and quality and, most importantly, their passion for sharing the enchanting culture of Japanese traditional cuisine to the world.
