Concept :

Shimbashi Tamakiya is a long-established tsukudani specialty shop, dating back to 1782 in the Edo Period. Tsukudani is a Japanese traditional dish that sees seafood, seaweed, vegetables or even meat cooked in a soy sauce base, giving it a sweet and salty taste. Its name comes from its origins on Tsukuda Island in the Edo period (current day Chuo Ward, Tokyo). Tsukudani was valued as a preserved food, and samurai who traveled to Edo would bring tsukudani home as a souvenir, and it became popular all over the country. Tamakiya’s tsukudani and boiled beans do not use any chemical seasonings or additives, and have been made the same way since the Edo Period.

Key Points :

All products are produced in Japan and sold in-house, ensuring consistent quality control. It has been 240 years since the shop was founded, and because of their secret sauce, this one-of-a-kind richness and taste cannot be found anywhere else.

Recommended Dishes :

In addition to Tamakiya being a retail store for tsukudani and furikake seasonings, there are 3 counter seats where they serve dishes made with their products. The tsukudani pairing course (¥6,980) is recommended. The course includes 8 dishes and 3 kinds of wine or Japanese sake. They will share the recipes for their dishes if you buy the tsukudani items needed to make them at home.

Their Onigiri Workshop (¥5,250) is also popular among overseas tourist. In this workshop, customers can make original onigiri using tamakiya’s specialty tsukudani and furikake seasonings. At the end of the workshop, an Onigiri Master Certificate will be issued, and customers are invited to wear a happi coat and colorful twisted headband, and take a commemorative photo (reservation required for pairing course and workshop.)

Tamakiya offers onigiri set (¥638~), kaiseki chazuke set (¥880~) and sweets (¥880) for lunch and snacks, as well as a 3 appetizer and wine set (¥2,420) and a tsukudani and sake set (¥1,320).
