With over 21 years of experience in French cuisine, Ishii has an extremely rich repertoire of traditional recipes and classic French specialties to choose from. Key Points :monoLith often gets exclusive meat from foreign countries like pigeon Ramier from Scotland and lobster from Brittany, France or the British Isles. Ishii and his team recommend the 3 meat pâté en croûte (French pie) with foie gras, duck and guinea fowl; the “monoLith egg” scrambled egg with honey cream and sherry vinegar; and the “bonne femme” turbot fillet served with a savory cream and egg sauce.
