Offering up a tranquil and relaxing space in the heart of bustling Shinjuku, JUNISOH on the Hilton Tokyo’s second-floor TSUNOHAZU dining area offers guests a delicious taste of authentic Japanese cuisine, carefully prepared using only the finest and freshest ingredients. With a blend of traditional Japanese aesthetics combined with modern touches, the space within JUNISOH is carefully partitioned using nonphysical barriers to differentiate them. From gleaming teppanyaki tables to a long, wooden sushi counter to sunken horigotatsu seating, the restaurant provides guests a true experience of Japanese traditional dining. They set itself apart by holding close to tradition. For example, the sushi chefs season their rice using red vinegar, a method that harkens back to how it was done in the Edo period, but is rarely seen today. In addition to sushi and teppanyaki, kaiseki, or traditional Japanese cuisine, is also available. They feature exquisite courses in addition to a la carte selections, including the chef’s specialty, abalone served in a clay pot (4,200). The restaurant has an impressive selection of drinks, including, wine, Japanese sake and a selection of shochu brewed from either barley, rice, potato or brown sugar to provide an excellent accent to any dinner selection.
