Concept :

At Maru, the cuisine reflects both traditional and modern influences and techniques based on the traditional kaiseki cuisine of Kyoto, as well as creative, contemporary styles. The focus is on producing creative, yet simply presented food using the freshest ingredients. These ingredients change monthly and include daily specials of fish, sashimi, grilled items, fresh vegetables and regional delicacies.
