Ginza Kuki, a Japaneses restaurant established by miso company, Hikari Miso, founded over 80 years ago in Nagano Prefecture, offers a theme of “fermentation and aging,” cultivated through mastery and dedication to ancient culinary traditions. Fermented foods such as miso are expertly incorporated into the dishes, and through the work of the masterful chefs, one of Japan’s most traditional culinary techniques shines.

Ginza Kuki welcomes diners to enjoy a unique fusion of the traditional techniques of Japan and fresh flavors from different culinary origins that can only be found within its elegant walls. They have a large selection of fine wine and sake that go well with their dishes. Finished in white with wood trim, the restaurant projects a calm Japanese atmosphere in a modern setting. There is counter seating, as well as table and private seating for up to 6 people.

Recommended Dishes :

Ginza Kuki offers their delicious KIWAMI (¥21,780) and NAGOMI (¥16,940) seasonal courses. They also have seasonal MIZUHO (¥19,800) and SAI (¥16,500) vegetarian/vegan courses, and gluten-free options are also available. Reservations required (1 day for seasonal courses and 3 days for vegetarian/vegan courses). The chefs use techniques that perfectly bring out the original flavors of the ingredients without using much sugar or other additives. Through this process, guests can enjoy a variety of dishes with mild flavors that are easy on the body.
