The sushi-making experience begins with donning the traditional white chef’s coat and apron, a symbol of respect, unity, and discipline in Japanese culture. Guests are then introduced to the heart of sushi—shari, or vinegared rice—carefully prepared using slicing motions to maintain each grain’s integrity. Quality is paramount, as participants sample exquisite nori and uni from Hokkaido, discovering flavors far beyond store-bought versions.They are then introduced to premium maguro (bluefin tuna) from Toyosu’s Ishiji market, exploring the unique textures of otoro, chutoro, aあnd akami through a hands-on temaki-making session. For the adventurous, the tour includes a live demonstration of ikizukuri, showcasing the rare delicacy engawa from flounder.
Guests learn to grate fresh wasabi using traditional sharkskin tools and practice shaping sushi rice into perfect bites. They are guided in precision slicing techniques using the elegant yanagiba knife before assembling their own sushi creations—fish, wasabi, and rice, all shaped by hand.
The experience concludes with a chef’s table meal: a plate of self-made sushi, comforting wakame udon, and a soothing cup of matcha. From start to finish, the journey blends tradition, craftsmanship, and flavor, leaving each guest with a deep appreciation for the art of sushi.

Sushi-Making Experience Course: Starting from groups of 2 people, the booking price is ¥12,000 per person. There is a 50% discount for groups of 10 or more (¥6,000 per person). Groups of 10 and more may reserve a branch of their choosing in advance. A Sake Tasting Experience is available for an additional ¥3,000, where guests can sample the unique flavors of three types of sake with their sushi meal: Itamae Sushi original sake, junmai-ginjo and junmai-dai-ginjo. Regarding vegetarian and allergy accommodations, the menu includes raw fish; however, individual ingredients can be prepared for those who are vegetarians. Guests are kindly asked to inform the staff of any allergies and preferences in advance, and individual ingredients will be provided as needed.In high-end sushi restaurants, sushi-making becomes a true performance — a choreographed sequence of motions that require years of training, dedication and intuition.
