コンセプト :

Mitchan Sohonten, which has six outlets in Hiroshima and has been in business for about 50 years, opened its first restaurant outside the prefecture in 2019. This shop was born out of the desire to let people know about the culinary treasures of Hiroshima and to welcome those who already know Hiroshima well to come and enjoy the nostalgia.

The okonomiyaki eaten in Hiroshima is a thin crepe-like dough served atop cabbage, meat and noodles. The sauce is unique to Mitchan, specially made by the Otafuku Sauce company. The fresh Chinese-style noodles start raw and are cooked perfectly crisp, while udon noodles are also available. Lots of cabbage and bean sprouts are contained in every serving, and it is easy to eat even with such volume. There are counter seats, table seats, and a semi-private room that can accommodate up to 8 people.

The standard combination of meat and egg (¥935) is recommended, ands from Hiroshima Prefecture, such as stir-fried sea urchin and spinach (¥1,580) and grilled beef brisket with salt and pepper (¥740).
the most popular option is the deluxe special (¥1,815) that contains many toppings, including seafood and mochi. Dinnertime is also rich in single dish options, and there are many that feature oysters harvested in Hiroshima Prefecture. Highly recommended are the oyster butter (¥946) and broiled oyster marinated with salted koji (¥1.078). There are also many other dishes from Hiroshima Prefecture, such as stir-fried sea urchin and spinach (¥1,738) and grilled beef brisket with salt and pepper (¥858).
