The house specialty is "dashi-shabu," an innovative way to enjoy shabushabu, or boiling meat and vegetables in a hot pot. Created in 2004, Hyoki introduced boiling thinly sliced pork and vegetables and dipping it in the house dashi. The new take quickly became famous in Kyoto and as its reputation spread, the dish became the house specialty. Hyoki also offers a large selection of wine and Japanese spirits to go with the food. The dashishabu course starts at 5,000 yen and other courses include the Omi-beef shabu-shabu courses from 5,500 yen and kaiseki courses from 5,000 yen.
