Born from the chef’s experience at the Hotel New Otani, Four Seasons, Conrad and Ritz Carlton, the restaurant runs under the concept of “the ultimate ingredients,” and uses only the best seasonal ingredients.

The restaurant offers extremely rare Kitauchi beef flown directly from Ishigaki Island in Okinawa. Raised for 40 months with strict controls on feed, air and drinking water, the meat is highly coveted for its deep and rich umami flavor. The meat is slowly cooked to perfection, bringing out the best elements to present guests with a steak boasting the optimum balance of amino acids, minerals and proteins. The food is arranged on plates to reflect the seasons with particular consideration of the colors, flavors and compatibility of the items.
