All of the produce comes direct from the farms in across Japan such as Hokkaido, Akita, Ibaraki, and Miyazaki that use pesticide-free and chemical-free fertilizers, carefully selected by the restaurant’s vegetable sommeliers in the best season. Fish tanks at all locations ensure the freshest possible seafood directly from the market and the wagyu is not selected from any one supplier, but the best is chosen from what is available at the time, and cooked in ways to showcase the meat’s quality. The food is grilled to perfection with minimal seasoning, allowing diners to savor the natural flavors of each item.
