Specializing in vegetables grown throughout Japan, Yasaiya-Mei works closely with over 20 farms to select the freshest, most interesting and highest quality vegetables. Every month, staff and chefs go work with farmers in the field to learn about local culture, customs and recipes, then bring back their inspiration and incorporate it into new innovative dishes.
