Concept :
Fresh Seafood Bistro SARU opened in 2012 with a mission to bring the best and freshest seafood direct from local waters to diners’ tables. It has formed partnerships with providers that come from generations of fishermen. For example, SARU’s oysters are sourced from Hokkaido in the winter, while the Noto Peninsula in Ishikawa provides delicious and firm oysters in the spring, ensuring the best quality year round. Reflecting the freshness of their offerings, SARU offers an everchanging catch-of-the-day, giving customers something new to look forward to with each visit. Ingredients such as authentic dried fish (mackerel, barracuda, etc.) made from time-honored Japanese recipes are used to fuse Japanese and Western cuisine, and offer guests a menu brimming with originality and flavor. The sommelier works with local domestic wineries, artisan exporters and chefs to offer a selection of more than 50 seasonally rotating vintages to ensure the perfect marriage of food and wine. SARU is also pleased to offer a selection of additive-free juices. Recommended is the quick-smoked tuna plate (950~); diners choose their cut of fish from a detailed diagram, the fish is then pan roasted and smoked in a stewpot with apple wood chips in the oven.
